▪ Traditional Behaviour :

The finest cooking in India was derived from the Mughals and did influence the royal kitchens of India. Agra's traditional Persian-influenced cuisine is renowned for its rich cream and curd-based sauces, kebabs, nan and tandoori breads roasted in earthen ovens, pulao rice dishes and milky sweets such as kheer. The great Muslim rulers brought their panache and elegance of living to India's culinary scene. The idea of community dinning and lavish and extravagant banquets were introduced to India. Dishes were served in jade, silver and Chinese porcelain. The splendor of the Mughal/Muslim cuisine is reflected in the Muglai Cuisine of India which is the richest and the most lavish in the country.

The city's speciality is Mughlai cooking. The superb Mughlai cuisine with its luscious sauces of milk, curd, cream and crushed nuts is available in major restaurants in the big cities. The irresistible Mughlai food is reminiscent of the Nawabi and the Mughal glory.

▪ Regional Specialities :

All the princely states of the past, boast of their own regional specialties. Agra is also known for two delicacies: The delicious ultra sweet candied pumpkin petha (crystallised marrow) and crisp spicy dalmoth (lentils) and Gajak.
